Banana and Chocolate Chip Muffins
If you’re a fan of bananas and chocolate then these are the muffins for you. Admittedly, they aren’t the easiest cakes to make and you won’t always have the ingredients on hand, but I promise that the results will be worth it. I have made them many times and people are always full of praise when they taste these tempting treats. Enjoy!

Ingredients
- 225g/ 8oz plain flour
- 1½ tsp baking powder
- ¼ tsp bicarbonate of soda
- 2 ripe bananas
- 115g/ 4oz butter, softened
- 115g/ 4oz caster sugar
- ½ tsp vanilla extract
- 2 eggs, lightly beaten
- 4 tbsp soured cream
- 85g/ 3oz white chocolate chips
Method
- Preheat the oven to 190C/375F/Gas Mark 5.
- Line 1x 12-hole muffin tray with paper cases (or 2 x 12-hole bun cupcake trays)
- Sift together the flour, baking powder and bicarbonate of soda.
- Place the bananas in a separate bowl and mash with a fork.
- Place the butter, sugar and vanilla extract in a large bowl and beat together until light and fluffy, then gradually beat in the eggs.
- Stir in the mashed bananas and soured cream.
- Fold in the flour mixture and chocolate chips.
- Spoon the mixture into the paper cases.
- Bake in the preheated oven for 20mins or until well risen and golden brown.
- Transfer to wire wrack to cool completely.
- Eat, or serve to guests if you’re feeling generous.
