Banana and Chocolate Chip Muffins

If you’re a fan of bananas and chocolate then these are the muffins for you. Admittedly, they aren’t the easiest cakes to make and you won’t always have the ingredients on hand, but I promise that the results will be worth it. I have made them many times and people are always full of praise when they taste these tempting treats. Enjoy!

This recipe was taken from the cookbook 1001 cupcakes cookies & other tempting treats.

Ingredients

  • 225g/ 8oz plain flour
  • 1½ tsp baking powder
  • ¼ tsp bicarbonate of soda
  • 2 ripe bananas
  • 115g/ 4oz butter, softened
  • 115g/ 4oz caster sugar
  • ½ tsp vanilla extract
  • 2 eggs, lightly beaten
  • 4 tbsp soured cream
  • 85g/ 3oz white chocolate chips

Method

  1. Preheat the oven to 190C/375F/Gas Mark 5.
  2. Line 1x 12-hole muffin tray with paper cases (or 2 x 12-hole bun cupcake trays)
  3. Sift together the flour, baking powder and bicarbonate of soda.
  4. Place the bananas in a separate bowl and mash with a fork.
  5. Place the butter, sugar and vanilla extract in a large bowl and beat together until light and fluffy, then gradually beat in the eggs.
  6. Stir in the mashed bananas and soured cream.
  7. Fold in the flour mixture and chocolate chips.
  8. Spoon the mixture into the paper cases.
  9. Bake in the preheated oven for 20mins or until well risen and golden brown.
  10. Transfer to wire wrack to cool completely.
  11. Eat, or serve to guests if you’re feeling generous.
