Carrot cake

This recipe is sooo good and super easy! Which is absolutely perfect for if you have a “spare” 15m to do some quick baking. Plus it tastes fantastic which is a huge bonus.
It’s entirely my mother-in-laws recipe so all credit goes to her.

2 Eggs
3/4 cups of sugar
1 1/2 cups of grated carrot
1 cup self raising flour
1 tsp baking powder
1 tsp mixed spice (careful not to add too much)
1 tsp cinnamon
Pinch of salt
3/4 cup of sunflower oil

Optional:
2 oz chopped walnut
Raisins / sultanas / orange zest

Sling it all into a bowl (which is of course the best method for baking) and mix together.
Put said mixture into a greased tin and cook at 180C for roughly half an hour (depending on your oven, because like babies – all ovens are different).
