Chocolate courgette cake

That’s right, chocolate cake can be healthy! “Courgette?” I hear you ask doubtfully… Well don’t click away too quickly because this cake is lovely and definitely worth making, especially for those of you who, like me, sometimes end up with a couple of courgettes left in the fridge.

7oz self raising flour
1tsp baking powder
1/2 tsp bicarbonate of soda
1/2 tsp salt
4oz caster sugar
6oz plain chocolate
2 large eggs
6 fluid oz vegetable oil
8oz peeled weight courgette (I remove the skin)
Optional: 2oz chopped walnuts

 

Sift all the dry ingredients into a large bowl
Beat oil into the eggs
Finely grate courgettes and collect any juice
Melt chocolate (over hot water)
Mix eggs and oil into dry ingredients, add melted chocolate, courgettes and walnuts if using.

Put into 2 lined tins (8″ round) and cook for approx 40m at 180C.

Optional butter icing:

2oz butter
3 or 4 oz icing sugar
1 tsp cocoa powder
