Madeira cake
This is a favourite of my husbands.
6oz butter
3 large eggs
1 tsp baking powder (add to plain flour)
6-7oz caster sugar
8oz plain flour
2 tbs milk
Cream butter and sugar until soft and light
Beat eggs and add gradually to the butter mix
Fold in the sieved flour, etc.
Add milk
Put into a lined 7″ cake tin and sprinkle a tiny amount of sugar on top.
Bake for approx 1 and a half hours in a moderate oven.
162-165C (or gass mark 3)
