How to make delicious Welsh Fruit Loaf

I’m a big big fan of Bara Brith. My husband and I practically lived off of it after the birth of our newborn son when our brother visiting from Wales first introduced it to us. Even my sister who hates dried fruit eats it.

I didn’t know the recipe so after much research I found this the easiest and most simple version to make.

Bara Brith (Welsh Fruit Loaf)

  • INGREDIENTS
  • Mixed Spice 1 Tsp
  • Self Raising Flour 275g
  • Strong Hot Tea 275g
  • Muscovado Sugar 225g
  • Sultanas 175g
  • Currants 175g
  • Egg 1 Beaten
  • Loaf Tin

METHOD

  1. Measure fruit and sugar into a bowl and pour over the strong black hot tea. Mix together, cover and leave out overnight.
  2. Preheat oven to 150 C. (gas 2).
  3. Lightly grease and line a 2lb loaf tin.
  4. Stir the sifted flour, mixed spice and egg into the fruit mixture.
  5. Mix thoroughly and turn into the prepared loaf tin (liners are great). 
  6. Bake in the oven for about 90 mins or until the loaf is firm to the touch.
  7. Cool in the tin before turning out.
  8. Add a layer of honey on top.
  9. Served sliced and buttered.
