Rum Truffles
There are many recipes out there for rum truffles but this is one that we use that is simple and tasty.
INGREDIENTS
175g/ 6oz chocolate (milk or plain) broken into pieces
4 tbsp double cream
2 tbsp icing sugar (sifted)
3 tbsp rum (or more according to taste)
1 cup of Chocolate sprinkles or sifted coco powder
Mini muffin cases (optional)
METHOD
- Place the chocolate and cream into a heatproof bowl, set the bowl over a saucepan of gently simmering water making sure the bottom of the bowl does not touch the water, until the chocolate has melted.
- Remove from heat and slowly sift in the icing sugar mixing constantly. Next add the rum and stir well.
- Leave mixture to cool until firm enough to roll into about 24 balls. Roll in the chocolate sprinkles or sifted coco powder.
- Place in small paper cases and chill until they are required.
